About the Author

LeAnne Campbell, PhD, lives in Durham, North Carolina. She has been preparing meals based on a whole-food, plant-based diet for almost 20 years. Campbell has raised two sons―Steven and Nelson, now 18 and 17―on this diet. As a working mother, she has found ways to prepare quick and easy meals without using animal products or adding fat. For more than 40 years, T. Colin Campbell, PhD, has been at the forefront of nutrition research. His legacy, the China Study, is the most comprehensive study of health and nutrition ever conducted. Dr. Campbell is the Jacob Gould Schurman Professor Emeritus of Nutritional Biochemistry at Cornell University. He has received more than 70 grant years of peer-reviewed research funding and authored more than 300 research papers. The China Study was the culmination of a 20-year partnership of Cornell University, Oxford University and the Chinese Academy of Preventive Medicine.

This is the book you want! Do you like pictures? This book has a beautiful picture for every recipe. Do you like easy recipes? Yep, it has those too. I love the layout, with easy to read font and off white background. I made the broccoli walnut salad first, very yummy. Whipped up some mango Azteca dressing for tomorrow, very tasty! I love cookies so I made the coconut oatmeal cookies, and they came out delicious. The blackberry tea cakes are next on my list! Loving this book! PLANT POWER!!!

Love this book, only had for a few days but every recipe has been awesome. Pictures are fantastic and printing is nice and large. Many new vegan recipes that I have not tried before. Even my meat eaters love it

This is one of the best plant based cookbooks we have bought. The recipes are super easy and call for ingredients one usually has on hand or can easily find at a regular grocery store. No specialty store shopping required. Very impressed.

I read and purchase many cookbooks, but this one is very different. I read each page, admired the photos and loved every recipe. The ingredients are easy to find, substitutes are mentioned and I’m anxious to put down the book and start cooking. I know my picky eaters will enjoy each recipe.The Author LeAnne Campbell includes her family which gives it a personal touch. It’s more than a table of contents, recipes and an index. It’s a book I want in my kitchen...

Deceptively easy and delicious recipes here. Macaroni and squash is a winner. Cauliflower Alfredo is also a multi-purpose winner. I like it as a pizza sauce as well as a pasta sauce. The chocolate pie crust is outstanding as is the simple pumpkin and the [un]cheesecake. Who knew that no-added-fat, vegan, whole-food, plant based could be so easy and so yummy.

I saw the reviews emphasizing that the author is not a dietician and the recipes do not have nutritional information. As I look at the recipes, I think that for those individuals using this book to lose weight or to keep weight down, they should remember that the author is not a dietician but it is a great book.Since I am gluten free, I will have to adjust recipes that use gluten. For my needs, I think the book uses too many carbohydrates and even perhaps sugar, but it is a great book. It is larger than I thought and the pictures are lovely and the recipes I have tried so far have been really good. I would recommend this book.

My mistake--should have read description and reviews more carefully, prior to purchasing. Recipes are oil-free, and heavily wheat based. Too restrictive for my purposes. As a positive note, recipe photos are beautiful.

I LOVE this cookbook so far! The 5 recipes that I’ve tried so far are delicious. My family even loves them. They are also simple, for the most part. I plan my grocery shopping around ingredients in this book. It’s fun to pick out what we will eat for the week, because everything has a picture. I’d give this as a gift, easily!
